Black bread soup

Ingredients for 4 persons:

1 onion
80g belly of pork, cut into strips
40g South Tyrolean butter
1 bay leaf
200g South Tyrolean black bread from the previous day, cut into large cubes
1 egg
400ml beef broth
salt
chopped parsley

Preparation:
Peel the onions, cut into rings and glaze in butter with the pork strips. Add the bay leaf and the cubes of black bread. Add the egg, stir and pour in the beef broth.Season with salt and allow to come to the boil briefly. Put on to plates, garnish with parsley and serve immediately.
