Rascal cookies

For about 40 pieces

150 g butter
2 egg yolks
125 g sugar
½ pack vanilla sugar
½ knife tip grated lemon rind
1 pinch of salt
300 g flour
1 knife tip baking powder

Apricot or strawberry jam for the filling
Icing sugar for sprinkling
Mix butter, egg yolk, sugar, vanilla powder, lemon rind and salt.
Mix the flour with sieved baking powder, add to the mixture and make a dough.
Let the dough rest (covered) in the fridge for about 30 minutes.
Roll out the dough and cut out rings from half of the dough, and round circles from the remaining dough.
Place on a baking tray with baking paper and bake in the pre-heated oven.

Finishing touch:

Let the cookies cool down.
Spread jam on the round cookies. Sprinkle icing powder on the ring cookies and put them on the round circles.

Hot air: About 180 degrees
Lower/upper heat: About 190 degrees
Baking time: about 8 minutes
